Ingredients
- 4 cups cooked wild rice*
- 4 cups spinach leaves lightly packed
- 2 cups diced celery
- 1 cup whole fresh mint leaves lightly packed
- ½ cup lime juice
- ¼ cup walnuts toasted
- 1 cup cherry tomatoes, halved (optional)
Instructions
1. Put all the ingredients in a large bowl and stir until well combined.
2. Serve chilled or at room temperature.
